Honey &
Bees

Everything you ever wanted to know about raw honey, honeybees, and why not all honey is the same.

The Difference

Raw vs. Store-Bought

🍯 Our Raw Honey

  • Never heated above hive temperature (95°F)
  • Only strained through mesh — never micro-filtered
  • Natural pollen intact — local allergy benefits
  • Active enzymes and antioxidants preserved
  • Complex, seasonal flavor — changes batch to batch
  • May crystallize — that's a sign of real honey
  • Grade-A Fancy classification

🏪 Commercial Store Honey

  • Ultra-pasteurized at 150°F+ to extend shelf life
  • Micro-filtered to remove all pollen (undetectable origin)
  • Pollen stripped — no local allergy benefit
  • Enzymes and antioxidants destroyed by heat
  • Uniform, bland flavor every time
  • Never crystallizes — sign of over-processing
  • May contain added corn syrup or imports
Our Varieties

Types of Honey We Produce

Wildflower

Our signature. Light amber, floral, complex. Changes slightly each season as bees work different blooms across the Ozarks.

Clover

Light, sweet, and classic. Harvested when hives are placed in blooming clover pastures each spring. Missouri's most familiar flavor.

Blackberry

Dark, rich, slightly fruity. Harvested during peak blackberry bloom in the Missouri hills. Bold and distinctive.

Creamed Honey

Raw honey whipped to a silky, spreadable consistency. Never cooked — just controlled crystallization with a touch of cinnamon.

Hot Honey

Raw wildflower infused with cayenne. The perfect sweet-heat balance for pizza, fried chicken, and anything else that needs a kick.

Cut Comb

Pure honeycomb cut straight from the hive. Edible wax included — packed with enzymes. The most unprocessed form of honey possible.

Honey by the Numbers

95
°F — summer hive temperature (same as our honey is kept during harvest)
60,000
bees in a peak summer colony
2
million flowers visited to make 1 pound of honey
0
expiration date — properly sealed honey lasts forever
The Colony

Meet the Hive

👑

The Queen

One per hive. She lays up to 2,000 eggs per day. The colony's entire future depends on her health. Lives 3–5 years.

💪

Worker Bees

All female. 95%+ of the colony. They build comb, gather nectar and pollen, make honey, defend the hive, and raise young. Live about 6 weeks in summer.

🐝

Drones

All male. Their sole purpose is to mate with queens from other colonies. They don't forage or sting. Evicted from the hive every winter.
